I have had homemade cornbread before and have always found it very dry. When my family and I decided to make a Southern dinner, we had to include Cornbread. I search the internet looking for recipes, but I was worried these would turn out just as dry.
I love the Superstore, and I’m always online looking at the flyer and recipes. When I came across this product and read the reviews, I thought I would give it a try. To the ingredients I also added one can of NN Cream Corn and 2 extra TBSP of oil to see if this would help keep the bread moist.
WOW, when we went to eat it is was super moist, and very yummy. The whole family enjoyed it.
I will definitely make this again, but i will make sure I add my extra ingredients to ensure the cake stays moist.

I loved this corn bread product. I have added chopped all natural hot dogs to make homeade pogos. I have added a tsp of honey to make them sweeter. I have added jalanenos and cream chees to spicy them up. I love that you can do so much with just one box. Unfortunately my Maxi does not hold this product any more, but i do go out of my way to buy it!

One of the things I've missed the most since I moved to Canada was true Southern Cornbread. I can not make home made cornbread, never could, but there were some excellent packaged mixes that I could 'add to' to get the right taste. When I got here I went looking for a box mix and could not find any! I was shocked!
Then one day we were checking out muffin mixes at the Superstore and there it was, this beautiful green box with the magic word: 'Cornbread' on it! We bought one box to try it out. OMG!! It was the Best I ever had! Moist, oh so moist! and a sweetness to it you only find down South. Not too sweet, but just the right amount. Sooooo good! One thing, we only cook with olive oil. I used that instead of going out and buying oil just for the muffins or by using phony butter. You know, that improved the taste even more! Really! We also used an organic free range chicken egg. There really is a difference in taste between that and the others.
We loved this cornbread mix so very much that when we made another trip to Superstore we bought up 4 more boxes. Each time we go to the Superstore (which is usually once a month) we are going to buy at least 4 boxes to add to our stockpile of foods. I recommend this to anyone who knows their cornbread mixes and to those who have never had corn bread. This is definitely the mix to buy to enjoy your first experience of eating awesome true Southern style cornbread!

I put the exact amount based on the instruction but found it was very dry. I think you have alternate the intruction to put milk instead of water or add more oil to make it softer and moisture. Taste ok but really..the muffins turned out pretty dry.

So I purchased 2 boxes to make savoury muffins since I didn't have enough time to make them from scratch. I added ham, cheese, red peppers, zucchini, broccoli, corn and green onion. I substituted the water for buttermilk, and also found that it wasn't enough. I ended up adding at least another 1/2 cup of water since the mixture was too thick. While they looked great once out of the oven, I agree that they are too sweet, especially when mixed with all of my veggies, ham and cheese. Not enough "corn" taste. Definitely a little disappointing since the ingredients I added and the cornmeal mixed should've balanced well. I even added some salt in hopes that it would help with the sweetness. Oh well, they're still going to get eaten!

I love this muffing mix,
I use a small container of applesauce in them instead of the egg and lower the calories
not sure why this product has so many negative comments, they are a bit dense, but very flavourful
my family loves them, but the mix is difficult to find

I didn't find that the amount of water called for in the directions was enough - they came out hard and very dense. Again, too sweet, as well. I'd like to see them a little lighter, lower cal, less sweet, and maybe with a bit of jalapeno for a kick.

Easy enough mix. I love corn muffins - just love 'em - but they aren't so easy to find here in Southern Ontario. So I was very happy to see PC come out with a corn muffin mix - organic, no less! They aren't bad - a little on the sweet side, and not as much corn flavour or texture as I like. But that's probably a personal preference. Not as good as home-made, but better than what I can find commercially.

I used this corn muffin mix to make pancakes...
use the recommended ingredients + 1/2-3/4 cup of milk. I added chopped jalapeno, scallions and/or chives + blue cheese. Mix it up and fry as you usually would pancakes...delicious with chili [or on their own]

I was also disappointed in these muffins. I love cornmeal muffins and these were not what I expected. My husband seemed to think they were OK but I bought two boxes at the same time and I haven't bothered to bake up the second box. I don't think they were bad, just not what I like in a cornmeal muffin.

In an effort to save time, I chose to make the PC Organics corn muffin mix over making corn muffins from scratch. That was a mistake. The muffins tasted like they were from a box. Very cake-y, with no hint of ground corn. Tasted very processed and stale, even though they were fresh from the oven. Not at all what I'd expect from an "organics" line of products.
Directions were easy to follow: the only positive aspect of this experience. I ended up having to throw out the muffins I made from the mix and started from scratch with the raw ingredients. To add insult to injury, I had made a double-batch (2 boxes), as I had planned on freezing some for future use.
